Jicama and Carrot Slaw with Honey-Lime Dressing recipe from Cookin’ Canuk

Ingredients

The dressing:
  • 1 tbsp + 2 tsp fresh lime juice
  • ¾ tsp honey or agave nectar
  • ¼ tsp ground cumin
  • ⅛ tsp salt
  • 1 tbsp + 2 tsp extra-virgin olive oil
The salad:
  • 1 lb. jicama, peeled & thinly sliced
  • 2 large carrots, grated
  • 3 tbsp minced cilantro
  • ½ jalapeno pepper, seeded & minced
